Smoked Butternut Agnolotti
Winter can be challenging for chefs like Amber Webster: inspired by the Farmer’s Market and fresh seasonal vegetables. But she rises to the occasion with this delicious dish using Oregon Butternut Squash.

How is it prepared?
Oven-roasted butternut squash is smoked over applewood chips to lend a rich savory flavor. The resulting puree is piped into fresh housemade sheets of soft egg-rich pasta, and formed into the signature agnolotti pillow shape. For your order we add walnuts, fried sage, pecorino toscano cheese, and a sauce made with brown butter and lemon..

2010 Sonoma Cutrer, Chardonnay
(buttery, oak, vanilla)
